This bread is dang ugly … but soooooooooo yummy. It kinda ‘deflates’ into a dense looking bread, but it’s really moist and tender and so yummy. You’re going to love it! (sorry … a few more ingredients than I usually require you to have, but they’re all pretty basic) It’s caramel-y … and seriously like a party in your mouth. Go use your old bananas before they liquefy!!!
3/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
2 cups sugar
2 large eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed bananas (like, 3 bananas)
1 cup chopped pecans, toasted
1/2 teaspoon vanilla extract
1/2 brown sugar, 1/4 cup butter, 1 tsp cinnamon (for topping)
Directions:
Cream together butter and cream cheese at medium speed using electric mixture. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition. Add salt, soda, and baking powder. Mix in flour. Stir in bananas, pecans, and vanilla. Spoon batter into 2 greased 9x9 baking dishes or muffin tins (ditch the loaf, trust me).
In a separate bowl, melt 1/4 cup butter. Add 1/2 cup packed brown sugar and 1 tsp cinnamon. Stir until well combined. Sprinkle evenly across the top of each dish.
Bake at 350° for 30-40 minutes or until a long wooden pick inserted in center comes out clean and sides pull away from pan, shielding with aluminum foil last the 15 minutes to prevent browning, if necessary. Check on it at 30 minutes and assess the situation. ;)
